Many of the animals you encounter during the game are passive creatures, which are non-hostile and unable to attack or harm you.
These creatures can be attacked, and will always die in one hit. However, they are usually domesticated, meaning they're owned by someone, and killing them will be considered a Crime if witnessed. They can be harvested for Provisioning Ingredients.

These creatures can be attacked, but will always die in one hit. Note that they are not generally affected by Area of Effect attacks, but must be attacked directly. They may usually be harvested for Food Ingredients or bait for fishing.
Cliff Skippers can be found around Vvardenfell. They are smaller versions of the more hostile Cliff Striders. There are also flying Cliffracers, which can be seen in the skies over Vvardenfell and Stonefalls, though these cannot be attacked or interacted with in any way.
Daggerbacks can be found in Craglorn, Wrothgar, Northern Elsweyr and the Gold Coast. Purple Daggerbacks are found in magically scourged regions of Craglorn. They yield white meat and guts when killed.
Lizards can be found in a variety of locations. These include the Alik'r Desert, Deshaan, Ebonheart's Argonian Quarter, Grahtwood, Greenshade, Grahtwood, Stros M'Kai and Malabal Tor. They yield Guts when killed.
Nixads can be found in the Gold Coast, Summerset, Artaeum and on Vvardenfell. Uniquely, these creatures are sometimes able to dodge attacks, so it may take a couple of tries to kill them. They yield Insect Parts and a variety of weapon and armor trait stones when killed.
These are not true creatures but rather are just part of the environment of the game. These animals have a very limited number of animations and the only way to interact with them is by activating them (which yields bait for fishing, as well as possibly Alchemical Reagents).
Bright Moons Lunar MothsEdit
Fetcherflies can be found in most places in Vvardenfell, particularly around Fetcherfly Nests. They yield Insect Parts. (Note that the nests will defend themselves by releasing swarms of hostile fetcherflies, which are not passive creatures. Solitary fetcherflies are harmless and can be harvested, rather than attacked.)
These are creatures that cannot be harmed at all or interacted with, though they often have a name that you can see when looking at them. These creatures are usually Friendly.
Cats are often found in settlements and buildings. They come in several colors, such as brown, gray tabby, and seal point.
Dogs are found around settlements. There are several breeds, such as a hound, a retriever, and several different colored of wolfhounds.
Horses can often be found in settlements, usually in or near stables. They come in several varieties.
These are purely aesthetic, and are just a visual element rather than being true creatures, as they do not have a creature name appear when you look at them. They may react to your presence, but cannot be harmed or interacted with in any way.
Ants can be found climbing up trees in Northern Elsweyr.
A variety of birds can be seen across Tamriel, flying in the sky, or perching on trees, objects, and the ground. Some fly away when approached, while others continue to sit there.
Cliffracers are often seen in the skies above Stonefalls and Vvardenfell. Their land-based cousins, Cliff Striders and Cliff Skippers, can also be seen on Vvardenfell, though these can be killed, and Cliff Striders are also hostile.
Termites can be found on termite mounds in Northern Elsweyr.
